Vegan Veggie Burger

So, summer is coming up…

and that means that where I live grill outs and hot weather is upon the horizon. This will be my first summer as a vegan and I’m super excited for all the summer fruits and vegetables that are going to be in season. However, this also means that this summer I’ll have to be a little more responsible than just bringing chips to a party. Ha, I write this as if I have a ton of cookouts to go to.

So instead of burgers and hot dogs, I decided to try my hand at making a veggie burger. Now, I’m familiar with the frozen kind, like Beyond Meat or Gardein, but it’s not always that impressive bringing frozen patties when everyone else is showing off. I had absolutely no idea where to start with this one, but I found a simple, yet amazing, recipe from CaseyJade.com that I will link below. I used this as a base for my trial run on these burgers. I’m glad I did, because it was super easy and really delicious.

  1. Cook Quinoa according to package directions. Cook the sweet potato during this time as well.
  2. Preheat oven to 355 degrees Fahrenheit
  3. Add all of your ingredients to a food processor. Process until everything is broken down together
  4. Take about half a cup of the mixture and form it into patties with your hands. This should make about eight
  5. Place these on a baking sheet with parchment paper so they do not stick and place in the oven for 40 minutes. I turned mine over and baked for about 5 more minutes to get both sides crispy, but this is up to you.
  6. Assemble the burgers with your favorite toppings. I used vegan mayonnaise, mustard, ketchup, caramelized onions, tomatoes, and avocados.

You can use whatever topping you would like.  I haven't tried this fried in the pan, but it seems like they may fall apart easily, so I would recommend baking. 

These veggie burgers are a guilt free vegan option that is not only healthy, but yummy. They are great to bring to a cook out, or perfect for making at home.  They are crunchy on the outside and soft on the inside and there are so many ways to make it your own. 

There are so many ways that you could dress up your burger. Although this was my first time making my own veggie burger even my fiance, who is not vegan, said that is was really good. I would definitely add some things to this to make it less dry; I used vegan mayonnaise, ketchup, and mustard. You could always try and make this more gourmet or even add more spices to it.
