Veggie Burger
This simple veggie burger recipe is an easy to make, and healthy comfort food that’s perfect for a summer cook out.

  1. Cook Quinoa according to package directions. Cook the sweet potato during this time as well.
  2. Preheat oven to 355 degrees Fahrenheit
  3. Add all of your ingredients to a food processor. Process until everything is broken down together
  4. Take about half a cup of the mixture and form it into patties with your hands. This should make about eight
  5. Place these on a baking sheet with parchment paper so they do not stick and place in the oven for 40 minutes. I turned mine over and baked for about 5 more minutes to get both sides crispy, but this is up to you.
  6. Assemble the burgers with your favorite toppings. I used vegan mayonnaise, mustard, ketchup, caramelized onions, tomatoes, and avocados.

You can use whatever topping you would like.  I haven’t tried this fried in the pan, but it seems like they may fall apart easily, so I would recommend baking.
