Watergate Salad…
Watergate Salad, also known as green fluff, pistachio delight, or shut the gate salad. As a kid, I’ll be honest, I didn’t even know what it was called. I just called it that green stuff we had for dessert.
Anyway, I always remembered eating this as a child when I would go over to my extended family’s homes for Christmas or Easter, but never realized that my family was the only ones I knew that ate this. As far as I know this isn’t a “southern dish” but it is definitely different.
I just love how simple this recipe is to make. It’s literally only 4-5 ingredients that are also pretty inexpensive. I say up to 5 because I think the pecans are optional. People could always just add them themselves, which I prefer. You never know who might have an allergy, or who just doesn’t like them .
It’s also a pretty great party recipe. You can just throw all of this in a bowl, mix it up, and violà , you’re done. Just throw it in the fridge until you’re ready to serve. A great alternative to slaving over a batch of cookies and a way to mix things up. Although I personally enjoy a good cookie this is always a good choice as well.
Ps: If you are interested in a cookie recipe here’s a link to some simple shortbread cookies I made last year: https://tiffyouwereme.com/recipe/vegan-shortbread-cookies/
I’ve heard of some people replacing the crushed pineapple with mandarin oranges or some other fruit. Although I’ve never tried it I think it would be pretty interesting to see a variation on this recipe!
Well happy holidays and enjoy!
