S’mores…Some more what?

If you don’t think of The Sandlot or roasting marshmallows over a campfire when someone mentions the word s’mores then you definitely missed out.

Truthfully I could eat an abundance of s’mores in one sitting. More than I will admit to. My sister-in-law recently brought the idea back into my mind. I’ve also been wanting to make something s’mores related for awhile, but couldn’t decide if I wanted it to be cookies, a pie, or what I decided to make…s’mores bars.

Once I went vegan I thought that my days of s’mores were over because guess what, marshmallows aren’t vegan. This is because most marshmallows contain gelatin. However I was lucky enough to find vegan marshmallows in my local grocery store. I used the brand Dandies: http://dandiesmarshmallows.com/products.

I also used the original Nabisco graham crackers, but if you don’t mind eating honey then I think most graham crackers are fine to use.

You may be able to find all of these in your local grocery store as well, but if not amazon is always a safe bet.

Not all s’mores are created equal…

For the graham cracker crust I combined cinnamon, the graham crackers, coconut oil, and flour. Instead of coconut oil you could also use vegan butter, however I didn’t have any on hand. As for the crust, you want it to be to your liking. It can be pretty crumbly, I personally like it that way, but if you want it to be more firm you will want to make sure you add more flour so that it all sticks together.

The amount of chocolate chips you use is up to you. Same for the marshmallows. Honestly, I used the entire bag of Dandies marshmallows. However I think that smaller marshmallows or breaking them up may have been a better choice. Oh well.

Overall, this is a super sweet, sticky, treat and definitely a winner.

A sticky, sweet, veganized treat. These s'mores bars are easy to make and there's no need for a campfire with these bad boys.

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Line a an oven safe pan with parchment paper. I used a 9 by 13 pan, but you can use whichever size pan you would like.
  3. Break down the graham cracker crumbs
  4. Add the crumbs, coconut oil, flour, and cinnamon to a food processor. Pulse until a flour forms.
  5. Press down graham cracker crumbs into the pan. Bake for about 15 minutes.
  6. Take out and spread the chocolate chips on top Then add the marshmallows on top of that.
  7. Put back into the oven for about 5-7 more minutes. Keep checking the marshmallows. You will want to take it out when the marshmallows start to brown.
  8. Take out and let cool a few minutes before serving. It is best served while still warm and melted.
Recipe Notes

When using the food processor- if the dough seems too crumbly add more coconut oil or vegan butter. If it seems too oily add more flour or graham cracker crumbs. Pulse to a texture you like.
