Looking for an easy soup recipe?
Well this is definitely it. This simple carrot soup is easy to make and you can add as many spices or other ingredients to it that you would like.
I don’t know if it’s the colder weather or what, but I’ve really been craving soup. However, I also haven’t been up to the challenge of making some complicated soup recipe. So, I was pretty happy when I came across this one. It is just a simple matter of cutting up ingredients, putting them in the pot, and waiting.
Although I decided to make this recipe using a big pot on the stove top, you could also use an Instant Pot for this. I wrote the instructions for that in the recipe notes below. Although this is just a simple carrot soup recipe I think it would be great to add in some curry powder to spice things up.
Although I don’t have an immersion blender it would be helpful to have to blend everything together to make it smoother. However, I just moved the soup in batches to the blender and back to the pot to mix in the coconut milk.
I also topped this with Italian parsley for garnish, but that’s just a matter of preference.

- 1 tbsp olive oil
- 1 yellow onion chopped
- 3 cloves garlic minced
- 5 large carrots chopped
- 4 cups vegetable broth
- 1 tsp Salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 can coconut milk About 13.5 ounces
- juice half lemon

- In a large pot heat up the olive oil and saute the onions on medium heat for about 5 minutes.
- Add the garlic and cook for 1-2 minutes.
- Add carrots, vegetable broth, salt, pepper, and thyme. Stir and cook for 20 to 30 minutes, until the carrots are soft.
- Blend until smooth. You can use an immersion blender or transfer to a blender in batches and transfer back to the pot.
- Stir in the coconut milk and lemon juice. Enjoy!
You could also use an instant pot for this to speed things up. You would just start off sauteing the onions and garlic on saute mode and then add the rest of the ingredients. Turn off saute mode and switch to manual mode for about 5 minutes. The rest of the would be the same!
