A perfect breakfast…

Or snack, really. It has been so long since I made granola that I knew I just had to try out another recipe. While browsing the interwebs I discovered a few recipes that infused orange zest with the granola. I had to give it a try. My first thought immediately went to orange cranberry granola. Not only did this sound yummy, but I had all the ingredients on hand. It was definitely worth it and I was actually surprised at how subtly, but perfectly the orange flavor came through. Definitely going to have to test out some other recipes with this method.

This granola is sweet, with a tangy kick. The cranberries add a bit of tartness to the mix, and of course I just had to add in an array of nuts. If you’re not as big of a nut fan as I am you can always pick and choose what you would like to add. It just so happens that I had a bunch to throw in the mix. If you are not a fan of the dried cranberries you could also leave those out or replace them with raisins. However, I would suggest giving it a try because it adds a lot more to the granola mix than you think it would.

I think that this granola is a great snack to take with you on the go. I’ve been taking it to work and it definitely hits the spot when those hunger cravings start to kick in. This makes a ton of loose granola though, so it is also a great breakfast idea if you like oats to start your day!

Orange Granola
This homemade granola is infused with orange zest and tart dried cranberries, making it a delicious breakfast or an easy on-the-go snack!

Instructions
  1. Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper.
  2. In a small bowl combine the orange zest and the sugar. Use a spoon to rub together until fragrant and orange.
  3. In a large bowl combine the oats, almonds, pecans, walnuts, salt, cinnamon, and orange sugar. Stir to combine.
  4. Pour in the coconut oil, maple syrup, and vanilla extract and mix.
  5. Pour the granola on to the baking sheet and spread in a single layer.
  6. Bake for 20 minutes, stirring half-way through. The granola should be turning light gold in color.
  7. Let the granola cool and then add the dried cranberries.
  8. Store in an airtight container for 1-2 weeks, or in the fridge or freezer for longer.
