Instructions
Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper.
In a small bowl combine the orange zest and the sugar. Use a spoon to rub together until fragrant and orange.
In a large bowl combine the oats, almonds, pecans, walnuts, salt, cinnamon, and orange sugar. Stir to combine.
Pour in the coconut oil, maple syrup, and vanilla extract and mix.
Pour the granola on to the baking sheet and spread in a single layer.
Bake for 20 minutes, stirring half-way through. The granola should be turning light gold in color.
Let the granola cool and then add the dried cranberries.
Store in an airtight container for 1-2 weeks, or in the fridge or freezer for longer.
