Let’s talk Oats…
Oatmeal for breakfast is one of my go-to meals. I mean you can top it with fruit, chocolate, coconut, or really whatever you want. Honestly I’m surprised that it took me this long to add a recipe like this to the blog.
I’ve been experimenting recently with my oat recipes. Usually in the mornings when I’m on the go I just add boiled water to my oats and top it with frozen fruit and chia seeds. But everyone has to change it up now and again, right?
Who doesn’t love coffee?
So, if you don’t already know I’m a pretty big coffee drinker. It wasn’t until I met my husband that I even began to like coffee so I can thank him for that. Anyway, I was already going to try out a recipe for chocolate oats, but I decided to step it up even further and add espresso powder to the mix.

Typically it is used for baking purposes, but it worked well in this recipe. I mention it in the recipe below, but I want to stress that it might be in your best interest to dilute the espresso powder in water before you just go adding it to your oatmeal straight up. This brand recommends adding a teaspoon to a cup of hot water to start off with. I ended up using two adding to teaspoons of espresso mix to the water and then two teaspoons in my oats. I was left over with some afterwards, but you can always save it for another batch of oats another day which is helpful.
I’m really happy with how these ended up turning out. They were creamy, chocolaty, and you can add whatever you would like to top it off. I just ended up add some vegan chocolate chips and melted peanut butter to mine. I think it would still be really good with blueberries, bananas, or strawberries too. Enjoy!

- 1 cup almond milk Or milk of choice
- 1/2 cup old-fashioned oats
- 1 tablespoon maple syrup
- 1/2 tablespoon cocoa powder
- 2 teaspoons espresso powder diluted
Ingredients

- Pour the milk, oats, and maple syrup into a pot on the stove and bring to a simmer.
- Pour two teaspoons of espresso powder into a cup of hot water to dilute.
- Simmer oats for five minutes. Stir consistently and remove from the stove.
- Add in the cocoa powder and a teaspoon of the espresso water to start off with. You may want to add more espresso flavor, but that's up to you.
- Pour into a bowl and top with your favorite toppings!
-Remember to dilute your espresso powder or you may end up feeling like you are eating coffee.
