Vegan Shortbread Cookies

This simple shortbread cookie recipe is easy to create and completely vegan. I’d like to think that Santa would be pretty impressed with how these taste.

Getting into the holiday spirit…

Since it’s the holiday season I have been trying to do more to get into the holiday spirit. When I was a child, every year around Christmas time I would always make cookies with my mom and my brother to leave out for dad, I mean Santa, to eat. It became a tradition so I decided to bring it back for myself. Therefore, I ensued upon my quest for my first holiday cookie.

I came across many different recipes that I do still plan on making, but I specifically wanted to try and veganize a recipe myself. Now I’m definitely not the best baker. I’m much more comfortable creating recipes involving more savory foods. Vegan baking is a whole new experiment for me so I definitely played it safe this time around.

After scouring the internet I decided upon shortbread cookies. I looked at multiple different recipes for shortbread cookies and came to the conclusion that these seemed like they would be pretty easy to make vegan. I feel like these are also staples when it comes to Christmas time and decided to go for it. Not to seem like I’m trying to take the easy route here, but I kind of am.

So take it from me, this is a super easy recipe to duplicate and there isn’t a whole list of weird, difficult to find ingredients that you will have to search for. The only vegan ingredient that I really needed was vegan butter, which I was able to find in my local grocery store. So go ahead and give these a try. I guarantee you won’t be disappointed. Oh, and the best part is you can as many sprinkles as you’d like!

Instructions
  1. Preheat the oven to 300 degrees F and line baking sheets with parchment paper
  2. In a large bowl beat together the butter and powdered sugar until it is light and airy.
  3. Next mix in the other ingredients (flour, cornstarch, salt, and vanilla extract)
  4. Dust hands with flour or cornstarch and form the dough into small balls. I made mine into balls a little smaller than a tablespoon.
  5. Place onto the lined baking sheets and press down each cookie with the top of a fork. You may want to dip it in the flour or cornstarch to keep it from sticking.
  6. Add sprinkles!!
  7. Bake for 14-16 minutes.
  8. Let cool and then eat up!
